Delicious and Nutritious Acai Berry Recipes

Acai Berry Ice Cream

Ice cream is one of the great pleasures in life. It isn’t the healthiest food that you can have, but you can always make your sinful treats a bit healthier by using a good product in them. While you probably won’t be able to get your hands on fresh acai berries, you can buy frozen pulp and use that instead. This acai berry recipe requires an ice cream maker.

1 ½ cups acai berry pulp
2/3 cup sugar or sugar substitute
½ cup corn syrup
6 tablespoons lemon or lime juice

Blend the ingredients in a food processor or blender until they are mixed. Then, just pour them into your ice cream maker and let it do the rest of the work. Once it’s done, you’ll have a delicious ice cream loaded with all the nutrients and antioxidants of the acai berry. And for a great smoothie, just pour the ice cream into a blender with some whole milk!

Acai Berry Popsicles

If you’re trying to get your kids to eat something healthy, a homemade popsicle can be just the thing you need. It’s easy to make, great during the summer and loaded with all the healthy benefits of the acai berry.

2 cups acai berry juice
½ cup skim or soy milk

Just mix the two ingredients together and pour them into a popsicle mold with some popsicle sticks. If you don’t have a mold, you can just as easily use an ice cube tray. Simply wrap cellophane over the top and stick toothpicks into the individual cubes. And to add a little more fun to the mix, you can buy edible glitter and sprinkle it into the mold. The popsicles will sparkle and the kids will love them!
